A delicious dinner recipe
I made Seafood Cannelloni tonight.  I saw the recipe on a repeat of The Giada DiLaurentiis show on the Food Channel, before the cruise.  I bought the ingredients today and made it tonight, and it was amazing!

First, boil the noodles.  I couldn't find cannelloni, so I used manicotti noodles, which look exactly the same.  Exactly.  Drain them after 7 minutes and let them cool.  In the meanwhile, mix together chopped up crabmeat, shrimp and a container of ricotta cheese.  Note- I used the whole box of pasta (14 noodles), and it was way too much.  I could have used half, and still had a couple leftover.  Also, crab meat is expensive- I used krab, imitation crabmeat, and it came out just fine.

Once the noodles are cool, stuff them with the cheese/fish mixture.  I actually ended up doing it with my fingers- the spoon, even the smallest one, seemed a little too big.  Place the filled manicotti in a pan, cover with sauce and grated parmesan cheese.  Note- Giada used a bechamel sauce on TV;  I used a regular marinara, which I know Dad prefers, but the bechamel looked pretty good on TV.

Bake at 350 degrees for half an hour.  Then serve.  I made a salad to have with it, and it went perfectly.   I have a ton of leftovers, so I'm freezing a whole bunch to eat at another time.
